Cheddar Biscuit Sloppy Joe Casserole

Ground beef and bread – my favorite combination! I love Sloppy Joe but I’ve never had it topped with biscuits but as my Babygirl says, “Why Not?” Homemade biscuits reminded me of the mornings in the country with my Grandmother. I wish I could have woke up to the smell and the steam rising. Mad I didn’t have some homemade maple syrup. That’s sounds really nasty to mix syrup, sloppy Joe, and biscuits but hey, I’m a country boy! The Sloppy Joe was perfectly flavored but just like every meal their was a trick somewhere…I just haven’t figured this one out yet!

Vegan Yellow Squash Casserole & Meat-filled Green Bean Casserole

I never liked green beans as much as my beloved sweet peas but whatever combination was put in this recipe hit the spot. I didn’t even really notice or think I was eating green beans. There was something “bacon like” I was tasting. This was something that I’ve never had before but once it hit my taste buds I was an immediate fan. Most of you may be thinking everything my Girl cooks can’t always be good. Sometimes she can go left on me like with the hamburger/hot dog thing but I’m telling you she is Blessed. Another great feeding. I have something new I can say I’ve tried and I’m a very picky eater. Chicken and beef for Life. LOL.

Portioned Turkey Meat Loaves With Cauli-Potato Mash

I put in a request for meatloaf and potatoes – again I feel like I’ve been fooled in some type of way! I found myself eating the meatloaf with my hands because I‘m country and it was so good I didn’t have time for a fork. The flavor was just popping out of the meat. The mash potatoes complimented the meatloaf well but I feel like there was something I did not know thrown in the recipe. Overall I loved this meal so much I had it two times in one day!!

Sweet Pea Stuffed Blackened Chicken Thighs

I requested baked chicken and of course My Babygirl obliged. The chicken was cooked to perfection. When I cook my chicken it always come out overcooked and tough, so I admire the fact that it was so tender. She always has something up her sleeve! I was saying to myself, “ this guacamole is a nice touch.” Now remind you I’m not a fan of guacamole so I have no idea what it taste like really, I just know it was a good stuffing for this recipe. Turns out it was my favorite pea made into some type of stuffing doohickey…only HER. She got me again, but it was awesome. Oh and, I can’t cook rice either so to be able to eat rice that was not hard in the middle was a plus as well.

Chicken Fajita Pie Bake

This one was a surprise because I thought it was Chicken Pot Pie? I asked for a Mexican dish so I should have known better. I don’t know whether you created it from an idea out of your head or if this is really a dish, but it was awesome. This is a top three for me, and my cousin Chris had a field day stealing them from me…he’s a fan now! As you know I’m really not into Mexican Food like that but this one I can eat this weekly. It had so much flavor. All the mixtures of whatever you put in it blended perfectly. Three thumbs up with this one. Oh, and Chris said your Green Stuff (guacamole) was Superb!

Potato Crust Breakfast Quiche

When I was younger my God brother made a quiche in his home economics class one day. He brought it home to his family and I ate some for dinner that night. Since then I have loved this dish but my mom didn’t know what it was and wasn’t about to waste her good money on experiments. When I saw this meal it immediately took my back to the day he brought the quiche home. It looked like cake to me not only because of the shape but because I had long craved that meal for many years. I guess that’s the unspoken bond me and my Babygirl have. Needless to say I had it for breakfast , lunch, and dinner. The mix of ingredients were perfectly blended. And again I can think she mixed in some greenery to make it wholesome, but I didn’t care I was just happy to remember that childhood memory. It was a wonderful mix of pleasure that myself personally ate breakfast, lunch, and dinner. Thank you Nic Love!!
