With the weather officially chilled down, or cold in some peoples terms, it just makes you crave warming foods. It also means that me as the cook just isn’t always in the mood to cook involved meals that I have to baby sit at every step of the cooking process. So I pulled out my stock pot for this feeding so I literally could just add it all to the pot and let it simmer away. Anyone else love soup season?! I took a recipe that I kind of make for myself meat free to create this recipe. It is an easy one that is supper inexpensive to make that only takes a few ingredients and using up those dried herbs that you have in your cabinet as well. All you need is two chicken breasts, some wild rice blend, lemons, chicken stock, a bay leaf, Italian seasoning, parsley, carrot, onion, celery, and salt to taste. Here is exactly what you will need to get to cooking!
Heat the avocado oil in a stock pot or dutch oven. Add the diced chicken breast and add the Italian seasoning, parsley, garlic powder, and salt stirring to coat the chicken. Cook until the chicken pieces are browned. Remove from heat.
Add the onion, celery, salt, and bay leaf to the pot. Cook until the onions are translucent, about 5 minutes.
Add the rice to the pot stirring and allow the rice to brown and cook for a few minutes. Be sure that you take care and don’t burn the rice.
Add the chicken broth to the pot. Stir the rice to be sure that it has not clumped up. Allow to come to a boil and reduce heat, cover, and simmer for 20-30 minutes or until your rice has cooked.
Once the rice has cooked add the chicken back to the pot, adding in the lemon juice and white pepper. Allow to simmer an additional 5 minutes. Season with more salt and pepper to taste and serve. This makes about 4 to 8 servings depending on how much soup you love to eat as a meal.

I absolutely Loved the soup!! I don’t eat soup that much but this was awesome Babe! I couldn’t get enough-I was mad again when it was all gone. The mixture of the veggies, rice, and whatever other healthy stuff you snuck in felt very nutritious! And you know the addition of the last ingredient just made it all good: THE CHICKEN! I’m about to start calling you the CHICKEN QUEEN! 🤤😂
