
It’s so important to not force food on people just because they are healthy for them! Take the time to figure out what healthy good for you foods you like because if you like them then you are more likely to enjoy eating them and not go into attack mode due to depravation of eating things that you are not enjoying. So when I learned that he loves cucumbers I went with it. It is something that I don’t have to hide in foods like I do with broccoli and can be the main ingredient, the star of the show!
This is one of the easiest recipes to throw together and can be eaten right away or allowed to let it sit and marinade for at least four hours for everything to bloom together. So grab a knife, cutting board, and measuring spoons to get started. Here is what you need to get to cooking.

- We are starting with the dressing/marinade first. In a large bowl add the olive oil, bagel seasoning, dill weed, apple cider vinegar, sea salt, and nutritional yeast. Whisk to combine together and allow to sit for about 15 minutes.

- Chop the onion into small diced pieces or thin rings and add to the bowl along with the cucumbers

- How you slice the cucumbers depends on when you are going to eat them, or just simply personal preference. If you are eating them right away then slice them thinner if a few hours later then a quick chop will be fine. Or ignore my suggestions all together and do what you like for YOU!

- Let sit for at least 30 minutes for the bagel seasoning time to rehydrate or add to a jar and let sit in the fridge for a couple of hours if not overnight.
